Fettuccini Alfredo

Ingredients

2 ½ - 3 lbs. boneless, skinless chicken breasts (uncooked)

Marinade:

    2 tsp. salt

    2 Tbsp. soy sauce

    1 tsp. sugar

    1/2 tsp. pepper

    2 Tbsp. oil

    2 large cloves of garlic, minced

1 (12 oz.) pkg. Fettuccini noodles

2 lbs. sliced carrots

2 cubes butter

2 cups whipping cream

1 – 1 ½ cups grated Parmesan

1/4 cup snipped, fresh parsley

Salt and pepper to taste


Instructions

1.   Stir together all Marinade ingredients in a medium sized bowl.

2.   Cut chicken breasts into small chunks.

3.   Toss chicken into marinade.

4.   Marinade chicken in the refrigerator as long as desired (Longer = More Flavor)

5.   Cook chicken in large fry pan with the lid on until chicken turns brown, stirring frequently. 

6.   Cook Fettuccini noodles as directed on the package.

7.   In a saucepan, boil carrots in water until tender.

8.   Drain carrots.

9.   In 9x13 pan, mix butter, cream, and Parmesan.

10. Place 9x13 pan in the oven at 350 degrees until butter is melted.

11. Keep in warm oven until chicken and carrots are done.

12. Remove 9x13 pan from the oven and add fresh parsley, salt, pepper, carrots, chicken, and            drained noodles.
